Cocoa espresso Cake Balls

Ingredients

  • 6 dates soaked overnight, water drained
  • 1 cup oat flour (3/4 cups oats in blender)
  • 1/4 cup cacao
  • 1 Tbsp espresso powder
  • 2 tsp Ceylon cinnamon
  • 1/2 tsp vanilla extract
  • Dash of sea salt
  • 1 tsp water or unsweetened almond milk
  • 1/2 Theo 85% chocolate bar
  • 1 Tbsp coconut oil

Instructions

  • Blend all ingredients, except chocolate, in small food processor
  • Mold into small balls and set aside.
  • Melt chocolate and coconut oil in saucepan over medium heat.
  • Dip cake balls in chocolate.
  • Refrigerate for 20-30 minutes until chocolate shell cools and hardens.
